Mango Pit Syrup
A great alternative to sucking on mango pits is using them to make a tropical-perfumed simple syrup. You get a deeper, more intense layered syrup with hints of tropical notes and you to control the added sweetener utilizing mangoes natural sweetness.

Mango Pit Syrup
Ingredients
3-4 mango pits with flesh
1 cup water
½ cup sugar, honey or sweetener of choice
Juice and zest of 1 lime (optional)
Method
Combine the mango pits, water, sweetener and lime juice/zest in a small saucepan and bring to a boil, stirring a little as it comes to a boil. Adjust the burnet to low and allow the mixture to simmer for about 10 minutes. Stirring occasionally. Take off heat and allow to cool completely. Strain and discard solids and refrigerate the syrup.
Use in cocktails and drinks, tea and sparkling water.
