Cucumber-Mango Cold Noodle Salad
This salad is simple and quick to make and is perfect for Tommy Atkins mangoes which are the best cubing mangoes because of their firmer flesh. But never fear, any mango tossed in noodles and dressing is a delight.

Cucumber-Mango Cold Noodle Salad
Ingredients
2 -3 cups cold, cooked udon or soba noodles
1 large English cucumber, sliced
1 red bell pepper, deseeded and chopped
½ red chili, deseeded and chopped fine
1 medium or large mango cut into bite size cubes
Handful of mind leaves, chopped
Handful of cilantro leaves, chopped
Handful of basil leaves, chopped
Juice of two limes
2 tablespoons sesame oil
1 tablespoon red chili sauce
1 tablespoon rice wine vinegar
1 teaspoon salt
1 tablespoon black sesame seeds (optional)
Method
Combine the noodles, cucumbers, bell peppers, chili pepper, mango and fresh herbs in a large mixing bowl and toss together until well mixed. In a separate smaller bowl, whisk together the lime juice, sesame oil, red chili sauce, vinegar and salt. Drizzle the deressing over the cold noodles and again toss together until the noodles and vegetables are covered in the dressing. Refrigerate. Serve with few black sesame seeds sprinkled a top
