Mango Gazpacho
Ingredients
2 medium Mangoes, peeled and diced small
1 red bell pepper, chopped fine
2 large cucumbers, peeled, deseeded and chopped fine
1 medium red onion, chopped fine
2 cloves garlic, chopped fine
1 jalapeño pepper, deseeded and chopped fine
¼ cup champagne vinegar
½ cup fresh cilantro, chopped fine
zest of 1 lime
juice of 2 limes
1 ½ teaspoon salt
1 teaspoon cumin
Method
Mix all of the ingredients together gently in a large mixing bowl Take 1 cup of mixture and blend in the food processor or a blender pulsing until semi smooth. Pour the liquid back into them mixing bowl and stir well. Refrigerate for at least 2 hours before serving. Serve with a lime wedge and garnish with a few cilantro leaves.
