Mango Bubble Tea

Mango Bubble Tea

Ingredients
For the syrup
2 fresh ripe mangoes, peeled and chopped
¾ cup raw sugar
1 teaspoon fresh ginger, peeled and chopped
1 cup water
*Mango syrup (Blend together all ingredients for the syrup)
for the Bubble Tea (Each Drink)
¼ cup strong black tea
¼ cup mango syrup
2 tablespoons cooked tapioca pearls, large
¼ cup coconut milk
crushed ice
Method
Make a large batch of black tea and tapioca pearls to make several drinks! Allow the teat to cool completely. To cook the tapioca pearls, bring small pot of water to a boil and add the pearls. They will fall to the bottom. Let the pearls boil gently for about 15-20 minutes take off heat and let rest covered. Pearls should float when finished cooking. Place the pearls in a bowl and pour a little Mango syrup to coat and mix, Just enough that they don’t stick together. Place in the refrigerator and cool. To make the bubble teas. In a shaker filled with crushed ice, place ¼ cup mango syrup, ¼ cup strong black tea, ¼ cup coconut milk and shake vigorously. Pour the mixture into a glass and add tapioca pearls and stir. Drink with a big straw!
